Caramel & Sea Salt Truffles

8 ounces Lucerne™ Cream Cheese, softened

3 Tbs Lucerne™ Caramel Macchiato Creamer

1/4 cup powdered sugar

3 cups milk chocolate chips, divided sea salt sprinkle

  1. In a medium mixing bowl, whip cream cheese until fluffy. Add creamer and powdered sugar. Mix well.
  2. Melt 1 cup of the chocolate chips in the microwave or double boiler. Add to cream cheese mixture and stir until fully incorporated
  3. Press plastic wrap onto the surface of the cream cheese mixture and refrigerate for 1 hour.
  4. Using a small scoop or spoon, portion truffles on a waxed paper lined sheet. If they become to warm, return to refrigerator before dipping.
  5. Melt remaining 2 cups chocolate chips and dip truffles, allowing excess chocolate to drip off before placing back on waxed paper. Garnish with a sprinkle of sea salt immediately. Refrigerate for at least 30 minutes. Keep refrigerated until ready to serve.

Peppermint Cake Mix Cookies

1 box chocolate cake mix

1/2 cup Lucerne™ Peppermint White Chocolate Creamer, divided

1 Lucerne™ egg

1 stick Lucerne™ Butter

1/2 cup chocolate chips

1 cup powdered sugar

1/2 cup crushed peppermint candies

  1. Preheat oven to 350º.
  2. In a medium bowl, whisk egg and 1/3 cup creamer. Continue to whisk while adding melted butter. Stir in cake mix until most of the lumps are smooth. Stir in chocolate chips. Refrigerate batter for one hour.
  3. Drop by tablespoonfuls with a cookie scoop on a baking sheet (best to cover it with parchment paper or use a silicone baking mat). Bake for 8-9 minutes. Remove and let cool on the sheet.
  4. In a small bowl, whisk powdered sugar and 2 tablespoons creamer to make a glaze. Drizzle the glaze on each cookie or gently drop a teaspoon or so of the glaze in the middle of each cookie (glaze should spread on its own). Immediately sprinkle some crushed peppermint candies in the middle. Let cool.
