My daughter recently has been requesting these waffles every morning, and I thought that it only made sense to share them with all of you in case your kids enjoy waffles as much as she does. Each morning we talk about what she might want to eat, and consistently it has been waffles, so here we are.

Growing up, my favorite mornings were when we got to eat waffles. My dad always toasted them to perfection and then put on just enough butter and syrup that each bite was an experience. Of course, I wanted to find a way to give Francine that same experience, but with a little more nutrition. She’s not a huge fan of sweets (is she my child?), so I needed to create a waffle recipe that wasn’t overly sweet but was still packed with flavor and nutrition.

These waffles check all of the boxes. They are fluffy, delicious, full of vitamins and protein, and easy to make. I recently made a batch of 30, and I am immediately so glad I did. Whenever we have a morning where Fran is craving waffles, I just grab one out of the freezer, pop it in the toaster oven and serve with a side of vanilla Greek yogurt and berries.

Spinach Waffles

Total time: 30 minutes

Servings: 24 waffles

INGREDIENTS
  • 2¼ cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • ⅓ cup salted butter, melted and cooled
  • 2 cups buttermilk, room temperature
  • ⅓ cup Greek yogurt
  • 1 teaspoon vanilla extract
  • ¼ cup honey
  • 2 eggs
  • 2 cups fresh spinach
STEPS
  1. In a large bowl, whisk together the dry ingredients and set aside.
  2. In a blender, add wet ingredients and spinach. Blend on high until smooth, about 2 minutes depending on the power of your blender.
  3. Pour wet ingredients into the bowl with the dry ingredients. Stir together until fully incorporated. Set aside.
  4. Heat up your waffle maker according to the manufacturer’s instructions. (Note: I am using the Dash Mini Waffle Maker. The following instructions will be specific to the size of that waffle maker.)
  5. Spray the plates of the waffle maker with a nonstick cooking spray.
  6. Spoon 2 tablespoons of waffle batter onto the waffle maker and close. Cook for about 2 minutes until the waffle is cooked completely. (Note: Depending on your waffle maker, you may have shorter or longer cooking times.)
  7. Place waffles on a baking sheet lined with parchment paper, and repeat to cook the remaining waffles.
  8. Either serve immediately with desired toppings, or freeze and toast or reheat on demand.
