Makes about 3 cups

7 to 8 plum (or heirloom tomatoes when in season), roughly chopped

10 fresh basil leaves, finely chopped

1 clove garlic, minced

¼ cup extra-virgin olive oil

1 teaspoon kosher salt

½ teaspoon freshly ground black pepper

Combine all ingredients in a serving bowl and stir well. Let stand at room temperature for 30 minutes for the flavors to develop.
