Makes 4 to 6 servings


– 4 tablespoons brown or red miso
– ¼ cup sake
– 1 tablespoon peeled and finely chopped fresh gingerroot
– 1 teaspoon finely grated lemon zest 1/8 teaspoon crushed red pepper flakes
– 1/8 teaspoon ground black pepper
– 1 teaspoon vegetable oil
– 1 flank steak, about 2 pounds




1. Stir together miso, sake, ginger, lemon zest, pepper flakes, black pepper and oil. Score edge of steak so it doesn’t curl when cooking and place in a food-grade, zip-top plastic bag. Add miso marinade, close bag and refrigerate overnight. Turn bag occasionally.



2. About 1 hour before cooking, remove steak from refrigerator. Place oven rack about 4 inches from broiler. Remove steak from marinade but don’t discard remaining marinade yet. Place on broiler pan.



3. Broil steak 6 minutes. Turn and pour remaining marinade over steak. Continue broiling about 4 to 5 minutes or until steak is medium-rare in the center. Let rest a few minutes before carving across the grain into thin slices.
