Turkey roasted to a chestnut brown, perhaps stuffed with orange sections and fresh thyme, is of course the Grand Dame of the Thanksgiving feast. But the season is ripe for other, more daring possibilities.

Proving once and for all that pumpkin has a place at the dinner table as well as the dessert cart, fresh squash is mashed with sage and honey, then layered with lasagna noodles, almond crumbs and béchamel sauce.

A more intimate gathering may feature game hens blushed with cranberry glaze. Or an extravagant beef fillet, graced with a heady wash of basil pesto, could be a fabulous focal point for a special gathering.
