Serves six to eight

½ cup mayonnaise

½ cup sour cream

2 tablespoons lemon juice

2 tablespoons sugar

1 teaspoon kosher salt

12 carrots, peeled and shredded

1 cup raisins

1 cup diced pineapple

¼ cup chopped chives

1. Whisk together mayonnaise, sour cream, lemon juice, sugar and salt in a large bowl. Add the shredded carrots, raisins and pineapple and mix. Just before serving, stir in chives.
